There are 142 coins altogether in the game. There are typically 10 coins per Stage (1 coin per level) with a couple exceptions. See below.

Stage 1 = 10
Stage 2 = 10
Stage 3 = 10
Stage 4 = 10
Stage 5 = 10
Stage 6 = 10
Stage 7 = 10
Stage 8 = 10
Stage 9 = 10
Stage 10 = 10
Stage 11 = 10
Stage 12 = 10
Stage 13 = 10
Stage 14 = 1 (14-6)
Stage 15 = 10
Stage 16 = 1

You will see a Crown Icon next to the Stage name, while browsing the stages from the level-select Map, when you have collected all coins from that stage. Each level will have a coin icon next to it when you have found and collected its respective coin as well.

The vast majority of the coins are in plain view and very easy to nab as you are going through the level. You must complete the level for the coin to be saved and counted. With that said, when you pick up the final coin, the trophy will not unlock until you complete that level. Happy hunting and good luck!

Master of the Castle
Complete all areas in a total of 250 minutes or less

This trophy is based on your "Best Time" for each level. You can replay specific levels as many times as you want and can (sort of) skip right to any level once you've unlocked it. There is not a statistic page or counter anywhere that will give you your total minutes so if you want, keep track right from the start. Once your total "Best Time" for all the levels (including the final boss fight) add up to less than 250 minutes, your trophy will pop right up.

Selecting a level:

If you are in game and want to replay the level you just completed, you must hit start and choose "Exit to Title Screen". Now select "Continue" and choose your level. You can back out of the Stage you are in by hitting the circle button; this will allow you to browse all the stages. Press cross to select a stage and again to load a particular stage up for re-play.

Stage 6, level 6 is perfect for this one. There are 4 unlit "torches" right in a row and close together. Simply select your red chalk and draw a line from the 1 lit "torch" to the 4 unlit ones. If you get hit, the line will stop so watch out for that; you can only draw 1 line at a time as well... they will cancel each other out if you attempt multiple. If you jump ahead a bit so you can see all the "torches", the enemies will usually go after the princess and allow you time to get them all lit up.

Keep an eye out for a long drop while going through Stage 13 (The Ramparts). There are quite a few places to achieve this trophy throughout these levels. Happy hunting and good luck!

The trophy description is misleading on this one... You must "Complete stage 11-5 without, yourself or the Princess, being teleported back to the beginning."

Take your time on this level and you should be just fine. You are allowed to be noticed by the enemies here (they will squeak and lift up their skirts to teleport you back to the beginning of the level); if you can kill them before they teleport you, you will be fine. Try to keep an eye on the Princess closely and keep her nearby. I completed this level a few times only to realize the Princess was being teleported (offscreen) while I was moving blocks around :(

Get to the end of the level without either of you being teleported and the trophy will pop right up. Good luck!

I believe you must be in Skeleton form for the deflections to count. I performed 100 deflections, in Hero form, right in a row and it did not pop up. Once I switched over to Skeleton form and farmed for about 20 minutes, the trophy popped right up. A great level to farm this on is 15-2. There are 4 boomerang enemies and the level is quite short.

My method:
1) Start by blowing up the 1st explosive barrel right where it sits to eliminate the pseudo wall.
2) Deflect 2 boomerangs and throw the left-most switch to lower the platform.
3) Drop down to the lower level and proceed all the way to the right; throw the switch to raise yourself back up to the upper level.
4) Blow up the 2nd explosive barrel and deflect 2 more boomerangs
5) Throw the righ-most switch to lower the platform and go all the way back to the left
6) Rinse and repeat until the trophy pops up.

If you're having trouble visualizing this method, watch my video here: http://youtu.be/xU3nrhH46CE

I don't believe deaths cause your deflections to go away as I died several times due to bad timing, haha. Good luck!
